As we attempt to shed those last few pounds from our seemingly endless diet, we are always looking for good healthy recipes around our house. J is an avid peruser (is that a word?) of Mr. Food's website, and he came across this recipe the other day. We tried it tonight (changing it just a bit, of course...seems like we never make anything exactly the way it's supposed to be) and it was delicious!
Crispy Parmesan Chicken
Serves: 4
Ingredients
1 (1.5-ounce) envelope dry spaghetti sauce mix
1 1/3 cups bread crumbs (We used Italian)
1/3 cup grated Parmesan cheese
1 (8-ounce) can tomato sauce (We used marinara sauce)
1 (3- to 4-pound) chicken, cut into 8 pieces (We cut a boneless, skinless chicken breast into small strips and pieces)
2 tablespoons olive oil
Instructions
1.Preheat oven to 400°F. Line a 9" x 13" baking dish with foil.
2.In a shallow dish, combine spaghetti sauce mix, bread crumbs, and cheese. Place tomato sauce in another shallow dish. Dip chicken pieces in tomato sauce then into bread crumb mixture, coating completely.
3. Place chicken in prepared baking dish; drizzle chicken with oil.
4. Bake 50 to 55 minutes, or until no pink remains in chicken.
We served the remainder of a jar of marinara sauce, heated, with egg noodles as a side dish. Did you have something yummy for dinner?
